You can, but they usually won't come out. There is a lot of dust kicked up by the horses and the show lights amplify that.
If you have a very nice/professional camera and sit in the front, it might be worth it. If not, I suggest just relaxing and enjoy the show! (Plus you'll need your hands to eat the food; nobody likes a greasy camera, right?)
