You'll most likely find this near rivers banks. You'll need a Perfect Beaver Pelt for part of the Valuables Satchel or for crafting hats with the Trapper.
"The North American Beaver can be found along the Kamassa River in Roanoke. Its herbivorous diet consists of tree bark, cambium, roots, buds, and water plants. A Varmint Rifle is the ideal weapon for hunting beavers. Beaver scent glands, skin and fat can all be used for crafting."

How Kill the North American Beaver in Red Dead 2 for a Perfect Beaver Pelt
To get a perfect pelt you'll have to find a Perfect North American Beaver and use the right weapons to kill it.
Like all animals, the Beaver can be skittish. Beavers are smaller and look similar to skunks and badgers. Keep your eyes peeled for an animal scurrying away. You can get a clean, perfect kill is with the Varmint Rifle or the Bow with regular arrows.
