All through American culinary history, we find melting-pot recipes comprised of ground pressed meatMeatloaf, meatballs, and of course, hamburgers are the most familiar.

Yet from region to region, other lesser-known dishes are enjoyed and passed on to each generation.

Chopped Steak is a recipe beloved in the lower midwest cattle lands, where steak is readily available, and gravy is free-flowing.

A plate of Chopped Steak and Brown Gravy is an ultra-satisfying meal. This is the kind of dinner that “sticks to your bones” and leaves you feeling comforted and happy.

What is a Chopped Steak?

Chopped Steak, also sometimes called Hand Steak or Steakburger, is similar to a hamburger patty.

However, it is made with pure ground sirloin instead of ground beef, and is usually served without a bun.

Because the fat content is lower in steak, than in ground beef, breadcrumbs are usually added to the patties to hold in the moisture.

Chopped Steak Patties are generally well-seasoned with herbs and spices, and served with mashed potatoes and brown gravy.

Chopped Steak vs Salisbury Steak

Chopped Steak is actually very similar to classic Salisbury Steak served with onions, mushrooms, and gravy.

However, there are two main differences.

A) Salisbury Steak is almost always made with ground beef, not pure ground sirloin. Whereas, a Chopped Steak Recipe comes straight out of American cattle country, where steak is in abundance.

B) Salisbury Steak usually has a tomato component in the patties or the gravy, so it tends to taste a little bit like meatloaf. Yet, the seasoning in Chopped Steak focuses more on accentuating the steak flavor.

Why Eat Chopped Steak When You Can Just Have a Steak?

You might be thinking, why a steak burger? Why not just buy and grill a sirloin steak to serve with mushroom gravy?

Well, you could definitely do that, and it would taste amazing.

However, buying ground sirloin for Chopped Steakburgers is definitely less expensive than buying steaks. So this is a budget-friendly recipe!

Also, the seasoning is mixed all the way through the meat, which adds a lot of additional flavor.

Yet the best reason of all, is that cooking Chopped Steak is less intimidating than cooking steaks. With steaks, we always worry about reaching the perfect interior temperature as to not overcook the steaks.

But with Chopped Steak, you just throw the patties in a skillet and flip them when they are brown.

No-fuss whatsoever!

Texas Steakburgers

Today’s recipe is inspired by a recent visit to my family in Texas.

My sister-in-law Jennifer asked me if I would develop a “Hand Steak” Recipe for her that was as good as their local diner’s version.

The key to making a killer Chopped Steak is to season the patties well.

You should pick seasonings and spices you would normally use in a steak rub, so that they bring out the best beefy flavor.

I like to include:

  • Worcestershire Sauce
  • Garlic Powder
  • Onion Powder
  • Smoked PaprikaFor its deep smoky essence.
  • Cracked Black Pepper

Mushroom Gravy

Juicy well-seasoned patties are priority one. Yet a fabulous brown gravy to pour over the steak patties is just as important!

Here I’m playing off the traditional Salisbury Steak toppings of onions and mushroom gravy.

The combination of butter, onions, beef broth, sherry, and mushrooms is the perfect complement to steakburgers.

How To Cook Chopped Steak Patties

  1. Mix egg, breadcrumbs, and seasoning into the ground sirloin by hand to make sure it is evenly distributed.
  2. Press the ground sirloin into tight patties.
  3. Heat a large skillet or sauté pan. Add butter and brown the patties for 5 minutes per side.
  4. Remove the patties and sauté the onions and mushrooms.
  5. Add flour, beef broth, and sherry and bring to a simmer to thicken the gravy.

Chopped Steak with Mushroom Gravy Recipe – How to Make Steak Patties with Brown Gravy, Onions, and Mushrooms, Texas-style!

For the Chopped Steak Patties:

Instructions

  • In a mixing bowl, combine the ground sirloin, egg, panko, Worcestershire, salt and all spices. Mix by hand to evenly distribute the spices throughout the meat. Then divide into 6 equal portions, and press into 1/2 inch patties.

  • Let a large sauté pan over medium heat. Add 1 tablespoon butter. Once melted, add the chopped steak patties to the pan. Cook for 5 minutes per side, flipping once. Then move the chopped steak patties to a holding plate and cover tightly with foil.

  • While the patties are cooking, chop the onion and thinly slice the mushrooms.

  • Add the remaining 2 tablespoons butter to the empty pan. Once melted, place the onions in the pan and sauté for 3 minutes. Then stir in the mushroom and thyme. Cook the mushrooms for about 5 minutes, to sweat out the juices.

  • Stir in the flour. Cook and stir for 1-2 minutes to lightly brown the flour. Then stir in the beef broth and sherry. Simmer and thicken for 5-7 minutes. Once the gravy is the consistency you like, place the patties back in the gravy to rewarm.

  • Serve the chopped steak warm with a generous portion of mushroom gravy. Serve with mashed potatoes or mashed cauliflower.
