I was given a very large bag of frozen peas and found this recipe when looking for ways to use them. Had all the ingredients on hand and made this soup tonight. It was definitely easy. Packed with nutrients and very filling. Enjoyed the texture/ consistency. I was a little disappointed that it mostly just tasted like peas - was hoping for a little more flavor, but overall, made a nice and simple meal. I think some crumbled bacon on top would be delish with this. Thank you for the recipe!

I soaked the cashews in hot water for 30ish mins because I didn’t have a lot of time and when I used a high-powered stand mixer, it blended wonderfully. Truly fantastic - a staple now for me, thank you Sadia and team!

I did something wrong here, it’s tricky with cooking in the metrics system, cause I think I had waaay to much liquid. It ended up being kind of like flavoured water 😅😬

This recipe is not only delicious, but also very quick and cheap to make. I often make this ever since I started college because I am on a tight budget. I didn't have any cashews so I skipped them, swapped dried thyme with dried oregano, but still turned out great. I highly recommend making this with the croutons. I just pan fried a slice of bread with some dried herbs and spices and the meal is instantly filling.

I highly recommend to top this soup with vegan sausages or smoked tofu. :)
I love this dish and my boyfriend (a non vegan) loves it, too.

Hey Effy! The cashews serve to make the soup a little bit thicker. You could leave them out entirely, or substitute them for some pre-soaked sunflower seeds, or equal parts unsweetened plant-based creamer, like soy creamer or oat creamer. We hope you enjoy the soup 😊

I had these frozen peas and edamame sitting in the freezer for a while and I just had to use them but I’m not a fan of peas so I didn’t know where to start. I’m so glad for pick up limes and this recipe, this soup will definitely be a staple for the cold months . Nourishing, Simple, and delicious !

Who would have thought pea soup could taste so great to an 8 and 11 year old!? My kids love this soup and I love that it has lots of great things in it to nourish their bodies. We've had it in a bread bowl from time to time and love how easy and great it is!

This recipe was absolutely delicious. The blend of flavors is really approachable and comforting.

I unfortunately struggled with the texture on this one. I used a good immersion blender that has worked well in other applications. No matter how long I spent blending, I was never able to break up the "skins" of the peas. The dried thyme, in addition, remained twiggy after cooking. So I sort of had to chew the soup, but hey, I happily ate the entire batch anyway.

My takeaway is that getting a nice, smooth texture might be more difficult for us folks who don't have high-powered blenders, and that fresh thyme might be a nice addition. But all in all, I'm game to try it again!

Nice and light green soup. Love the vibrant color but it wasn't substantial enough to be a meal in itself for us, so I would recommend pairing it with something as well.

Hey Bec, a serving is around 1.5 cups (375 mL) although in real life it may depend on some factors such as how long you leave the soup on the stove as some will evaporate or how big the onion used is 😊
