How can we keep sandwiches prepared well in advance to be grilled later? Will they retain the goodness as well as the taste?

Our answer

If a sandwich is to be grilled or toasted at a later period then you can make up the sandwich in advance and wrap it in clingfilm (plastic wrap) and keep it in the fridge until you are ready to cook. As the bread will be toasted it shouldn't matter too much if it dries out slightly while refrigerated but if you need to keep the bread soft then cover each sandwich with a very lightly dampened piece of kitchen roll (paper towel) and wrap tightly with clingfilm.

Most grilled sandwiches contain cheese and cured meats and neither of these should loose any goodness while standing. Any vegetables used, such as tomatoes, could be sliced and stored in seperate bowls and added just before cooking, so that the sandwich doesn't get too soggy (from tomato juices etc.) whilst standing. All perishable ingredients, such as meat, cheese and eggs, should be kept chilled until ready to cook and should be eaten promptly after cooking. We would suggest that sandwiches are not prepared more than 12 hours in advance, as beyond this there is a risk of fillings and bread starting to become dry or stale.
