You should not worry at all about them running low. If one particular station got low on supplies, they would just send someone backstage to get more. I have brought $100 bills to WDW several times and have never had any trouble having them accepted in the parks and resorts.

Walt Disney World Resort, the biggest Disney Resort and theme park in the world, has four incredible theme parks: Magic Kingdom, EPCOT, Hollywood Studios, and Animal Kingdom.

If you've booked a reservation that must be prepaid—or if you've opted to provide full payment in advance of your stay—the balance due upon check-in is zero dollars, and only the $100 authorization hold for estimated incidental expenses will be placed on your card.

I can happily report that at this time, Disneyland Resort is not cashless. Feel free to pay with cash, as well as other convenient forms of payment such as credit, debit, and Disney Gift Cards throughout much of the parks.
