I would like to make the Apple And Almond Cake. If I let it go cold and then cover it with buttercream, how long will it last and will it need to be kept refrigerated?

Nigella's Apple And Almond Cake (from FEAST) is a gluten-free cake made with apple puree, eggs, sugar and ground almonds (almond meal). The cake is best served slightly warm, as a dessert, but can be eaten cold. The cake is very moist and can be stored in an airtight container in a cool place for 2 to 3 days, or in the fridge for up to 5 days. In warm climates it is better to store the cake in the fridge. The cake can be removed from the fridge an hour before serving to let it come back to room temperature.
The cake could be left to cool completely and then iced, but you would need to omit the flaked almond topping. However the cake does sink slighty in the centre as it cools and is not a particularly deep cake, so we are not sure how suitable a buttercream icing will be. You may instead prefer to consider a topping similar to the cream cheese frosting on Nigella's Chocolate Guinness Cake. If using regular buttercream then the storage guidelines are the same as above. However if using the Chocolate Guinness Cake cream cheese frosting then it is best to refrigerate the cake as the frosting contains fresh cream.
