Why do you put raisins in ginger beer?
Others say the raisins are added to supply nutrients for the yeast. The ginger and sugar alone cannot host a very healthy yeast colony without the trace minerals supplied by the raisins. Whatever the case, your ginger beer needs it. They're also edible (at own risk).
Simply put it tells you when the ginger beer is ready to drink. When you add the raisins they rise and fall but when the yeast has converted enough of the sugars the raisins float. You can also eat them.

I would put them through a food processor to chop, then soak in either a few ounces of vodka or cook them in a bit of wort to sanitize before adding them to the beer. Alternatively, just use Special B malt, and get all the raisin flavors you could ever want without using actual raisins.

EVERY DAY (at least once, preferably twice) you need to “burp” your ginger beer. Put the bottle in the sink and SLOWLY twist the lid off to release the carbonation. If you forget to do this, the bottle could explode and leave you with a sticky gingery mess.
Allow the mix to ferment for at least 5 days – this is a minimum and extra time in the fermenter won't hurt it. You can leave it to ferment for up to 2 weeks without issue. Sediment in Your Ginger Beer
Your ginger beer may produce sediment, particularly if you ferment it for longer or use a ginger bug (for soda making) in your ginger ale. This sediment is normal in the fermentation process.
