July is National Hot Dog Month, a time to celebrate that all-American, but often misunderstood, meat product.

Call them "hot dogs," "weiners," "frankfurters," "franks" or "furters," they are without question America's favorite sausage product. It is estimated that more than 50 million hot dogs are eaten in the United States every day. That's about 80 hot dogs per person per year.

Hot dogs come in a variety of sizes and styles. There are all-beef hot dogs, hot dogs that "plump" when you cook them, kosher hot dogs, turkey hot dogs, chicken hot dogs, hot dogs with cheese in them. They come 10, eight and four; some are made a "foot long" and most, these days, unfortunately are "skinless." You have never tasted a truly great hot dog until you've tasted an old-fashioned "sheep casing" frank, preferably right out of the smokehouse, a classic treat!

Skinless hot dogs are made by stuffing the meat mixture into inedible air- and smoke-permeable cellulose casings. In a large packing plant the whole operation is automated. The hot dogs are never touched by human hands. As the emulsion flows through the stuffing horn into the casings, the filled strands are automatically linked into hot dogs of exact size. The strand of links is then put on a continuous line conveyor system that moves the hot dogs through the smokehouse where, under controlled temperature and humidity, they are smoked and fully cooked.

When they emerge from the smokehouse, they go into a "weiner skinner" that peels off the cellulose casing to yield a "skinless" hot dog. Now, I like hot dogs and I don't mean to imply that there is anything wrong with "skinless" ones, but in my opinion even the best of them pale when compared to a good "old-fashioned" hot dog.

"Old-fashioned" or "regular" hot dogs, as they are sometimes called, are usually a more expensive product, but worth the extra few cents they cost. Old-fashioned hot dogs are stuffed into natural casings, usually sheep casings, and the casing remains on the sausage, locking in the wonderful juices and flavors of the meat until you bite into it.

Producing "old-fashioned" hot dogs is a more expensive, more labor- intensive process. Casings must be stuffed using hand-operated equipment; the sausage must be twisted by hand into links.

There are a number of special ways that the all-American hot dog is traditionally served in different parts of America. In Chicago, a city that truly loves the hot dog, more hot dogs are sold at Chicago's O'Hare International Airport than at any other single location in the world; the traditional hot dog is served on a poppy seed bun, garnished with yellow mustard, dark green relish, chopped raw onion, tomato slices, topped with a dash of celery salt.

New York City vendors offer customers stewed onions with their hot dogs, while on Coney Island sauerkraut is optional.

In Boston, Cleveland and Los Angeles, chili dogs are popular served with chopped onions and grated cheese. A specialty found in Columbus, Ohio is "pigs in a blanket": hot dogs split down the middle, filled with water chestnuts, wrapped in bacon and covered with melted cheese.

No matter how you serve hot dogs, this National Hot Dog Month I urge you to seek out the "old-fashioned" kind, and if you can't find them, make your own!

HOMEMADE HOT DOGS

1 1/2 pounds beef chuck

1 pound pork shoulder (not too lean)

3/4 pound ice

2 tablespoons plus 1 teaspoon salt

5 teaspoons corn syrup

1/4 teaspoon liquid smoke

Grind beef and pork twice through the fine blade of a meat grinder, adding about half of the ice with each grinding. Or process in a food processor, adding the ice gradually until a smooth emulsion is achieved (about 45 seconds). Mix in all remaining ingredients, stuff into sheep casings and twist into links.

Cook in water at 170 degrees for about 15 minutes, or until the internal temperature of the hot dog is 155 degrees.

After the "franks" have been cooked, rinse in cold running water for about 5 minutes. Chill to an internal temperature of 90 degrees by immersing in ice water. Allow to hang at room temperature for 15 minutes to partially dry the surface. Refrigerate.

To heat your homemade hot dogs, or any hot dogs, place the number desired in a pan of boiling water, cover, remove from heat, let stand 5 to 7 minutes.
