Q. I am from the South and I love grits, but do they have any nutritional value?

A. Grits, which are uniform fragments of kernels of corn that have had both the bran and the germ removed, are significantly less nutritious than some other cereals, like oatmeal.

But grits, also called hominy grits, may have a respectable place in a balanced diet because of their smooth, bland nature; they can pick up the flavor of just a smidgen of some fattening additions like butter, bacon or ham gravy.

The good news is that a cup of enriched quick grits, cooked with water and with no salt added, has no cholesterol, no sodium and only a trace of fat, according to figures on nutritional values prepared by the United States Department of Agriculture.

Because the grits are enriched, they have had certain important nutrients added, notably folate, which has a role in preventing birth defects like spina bifida in the children of women who eat these products.

Grits also have thiamin, riboflavin, niacin and iron, as well as small amounts of other vitamins and minerals.

A cup of prepared grits contains less than half a gram of dietary fiber, as compared with nearly 4 grams for a cup of instant oatmeal; it has 145 calories, compared with 138 for oatmeal. C. CLAIBORNE RAY
