The first flat key signature is the key of F, or its relative minor, which is D minor (Dm). These keys have a single flat note: B flat (Bb). The other six pitches are natural.
To find the key of a song, simply locate the flat next to the last flat listed in the key signature. Here's B flat and E flat in the key signature. As you can see, B flat is next to the last flat listed. So this means that with two flats in the key signature, you're in the key of B flat.

The most difficult key is C major! In general, the keys that are easiest to learn are simultaneously the least natural for the hand. As a rule of thumb, the more black keys in a given key signature, the more comfortable it will be.
Noisy shouts of joy, laughing pleasure and not yet complete, full delight lies in E Major.
There is another trick for flat keys that I use, that I believe works for every flat key. Take the last flat and count down 3 lines/spaces (not including the line/space with the last flat) and that will tell you what key you are in. Since you are talking about flat keys then you just add the flat.

- So if a song is in Eb major, you'll attack E major next by literally taking every note in every chord and moving it up a half step.
What are the easiest key signatures to play?
Key signatures with sharps and flats aren't any easier or harder. On a piano, for example, I find E Major (4 sharps) to be the easiest to play, whereas the composer Chopin taught his students B Major (5 sharps) first since he viewed it as the easiest.
The darkest scale is the double harmonic major scale which is just a major scale with a flat 2nd and a flat 6th.
