  • Milk - 2cupsof milk.
  • Beef Broth - 2 ½cups ofbeef broth.
  • Egg Noodles - 8ounces of egg noodles.

This homemade beef stroganoff recipe is incredibly easy to make in one pot so you can skip out on extra dishes and big messes! Grab some measuring cups, a silicone spatula set, and a skillet to begin.

Hamburger Helper beef stroganoff makes 6 servings, there is plenty to share with the whole family on busy weeknights! If you serve with a few side dishes, you may have some leftovers that always taste better on the second day.

  1. Cook beef and drain. In a skillet over medium-high heat, brown the 1 pound of ground beef until no pink remains. Drain off the grease.
  2. Add dry ingredients. Add the 1 tablespoon cornstarch, 1 teaspoon salt, ½ teaspoon pepper, and ½ teaspoon onion powder to the ground beef and stir to combine and absorb any excess liquid in the pan.
  3. Add wet ingredients. Add 2 ½ cups beef broth and 2 cups milk to the skillet and bring to a boil. Once boiling, add in the 8 ounces of egg noodles and stir so they are mostly covered in liquid. Reduce heat to a simmer.
  4. Cook pasta until tender. Simmer until the pasta is tender, about 15 minutes. Then turn off the heat and vigorously stir in the ½ cup sour cream(*see note)followed by a splash of 1 splash Worcestershire sauce.
  5. Cool and serve. Allow to cool slightly before serving.

Hamburger helper beef stroganoff is hearty and delicious on its own, however, you can add your family's favorite side dish if desired! Try serving with a wedge salad and sauteed green beans.

💭 Angela's Tips & Recipe Notes

  • You can use a leaner ground beef to reduce how much grease needs to be drained from your skillet. However, fattier ground beef like 80/20 ground chuck is my preferred ground beef as it adds more flavor.
  • The milk can boil over quickly, so don't walk away as your dinner is cooking. Be sure to keep a close eye on your skillet.
  • If your sauce is too hot, your sour cream can curdle when added to the pan. This is why it is important to turn off the stovetop and remove the pan from heat before mixing in the sour cream.
  • Keep in mind that your sauce will continue to thicken as it cools.

Once leftovers are fully cooled, place them in an airtight container and refrigerate for 3-4 days. They can be frozen for up to 6 months if placed in an airtight freezer storage container or heavy-duty freezer bag with the air squeezed out.

Thaw frozen hamburger helper beef stroganoff in the fridge overnight. Reheat individual portions in the microwave for 1-2 minutes.

Alternatively, you can reheat on the stovetop in a saucepan or skillet, or place your leftovers in a baking dish and bake at 350°F(175°C)for 10-20 minutes.

  • In a skillet over medium-high heat, brown the ground beef until no pink remains. Drain off the grease.

  • Add the cornstarch, salt, pepper, and onion powder to the ground beef and stir to combine and absorb any excess liquid in the pan.

  • Add beef broth and milk to the skillet and bring to a boil. Once boiling, add in the egg noodles and stir so they are mostly covered in liquid. Reduce heat to a simmer.

  • Simmer until the pasta is tender, about 15 minutes. Then turn off the heat and vigorously stir in the sour cream (*see note) followed by a splash of Worcestershire sauce.

  • Allow to cool slightly before serving.

    I've made this twice, and will be making again. Agreed with adding garlic, but personal preference. Much better than the boxed version and you know what's going into it. I added a half pound more hamburger meat the second time, can't go wrong with the recipe, my family loves this!!

    I added garlic powder to this as well as some diced onion and garlic after I cooked the meat. This taste so delicious, my little one was helping and she really enjoyed it!

    I did a few swaps for what I had on hand like Italian sausage instead of ground beef and elbow macaroni instead of egg noodles.
